We are currently seeking passionate individuals to fill three key leadership positions: Pitmaster, Bartender, and Support Crew Leader.
Joining Stay Lit Smokerz isn't just about cooking award-winning BBQ; it’s about supporting the PGM Foundation’s mission to empower Texas youth through agriculture and education. Every brisket smoked and every drink served helps fund scholarships and community outreach programs for the next generation of leaders.
Open Positions
1. Pitmaster
The Heart of the Operation
We are looking for an experienced Pitmaster to lead our culinary efforts. You will be responsible for the flavor profile, cooking process, and quality consistency that defines the Stay Lit Smokerz brand.
Key Responsibilities:
Fire & Temperature Management: Expertly manage fire control and maintain consistent temperatures on offset and reverse-flow smokers.
Meat Preparation: Oversee the trimming, seasoning, and injection processes for brisket, ribs, pork, and chicken.
Timeline Execution: Coordinate cook times to ensure meat is ready for turn-in boxes or event service with precision.
Menu Innovation: Collaborate on rub and sauce profiles to keep our entries competitive.
Requirements:
Proven experience with large-scale smoking or competition BBQ.
Deep knowledge of wood types, smoke profiles, and meat science.
Ability to work overnight shifts during multi-day cook-offs.
2. Bartender
The Face of Hospitality
Our tent is known for good vibes and great hospitality. We need a Bartender who can keep the energy high and the drinks cold, ensuring our donors, guests, and team members are well taken care of.
Key Responsibilities:
Service Excellence: Prepare and serve beer, wine, and signature cocktails with a focus on speed and friendliness.
Inventory Management: Monitor stock levels of ice, mixers, and spirits, alerting the Crew Leader when supplies run low.
Guest Engagement: Act as an ambassador for the PGM Foundation, engaging with guests about our mission while serving them.
Safety & Compliance: Ensure responsible service standards are met at all times.
Requirements:
Previous bartending or high-volume event service experience.
TABC certification (preferred).
A charismatic personality that thrives in social settings.
3. Support Crew Leader
The Backbone of the Team
Great BBQ requires great logistics. The Support Crew Leader ensures the team runs like a well-oiled machine, handling everything "outside the pit" so the Pitmaster can focus on the food.
Key Responsibilities:
Logistics & Setup: Lead the load-in, campsite setup, and tear-down processes (tents, tables, equipment).
Runner Coordination: Direct support staff in keeping the site clean, trash emptied, and supplies restocked.
Turn-In Support: Assist in the critical final minutes of box building and running entries to the judges.
Team Morale: Keep the team organized, hydrated, and motivated throughout the event.
Requirements:
Strong organizational and leadership skills.
Ability to lift heavy equipment (coolers, smokers, generators).
Problem-solving mindset for on-the-fly event challenges.
